Pasta is a comfort food that can be lightened and brightened up for summer. Elizabeth Van Huffel of Local Savour stopped by the studio to bring us her personal spin on penne. She started by sauteing zucchini, squash, and garlic scapes in olive oil. She cooked penne pasta and reserved some of the liquid, then combined the squash and pasta with ricotta, walnuts and lemon juice for a light but hearty dish.
