If you’ve ever wanted to try a vegetarian lifestyle, trying this curry chickpea salad for lunch is a great way to get started. Since many of us are familiar with chicken or tuna salad, you’re basically substituting chickpeas as a plant-based protein.
Ingredients:
1 heaping TBSP Duke’s Mayonnaise
1 heaping tsp Madras curry powder
1 can Garbanzo Beans (aka chickpeas)
1/3 of a yellow onion (finely diced)
2 sweet pickles (finely diced – can sub 1 heaping tsp sweet pickle relish)
Salt & pepper to taste
Begin by heating the chickpeas until soft. Strain and add to a medium mixing bowl. Add the other ingredients and stir until well mixed. You can serve it with your favorite bread, in a pita, with crackers or on top of a bed of baby lettuce to get your greens for the day!
