AUSTIN (KXAN) - Z'Tejas Southwestern Grill offers brunch on Saturday and Sundays until 3 p.m. Besides muffins, pancakes and mimosas, the restaurant also makes killer quesadillas. The chef offered up his recipe on Austin News Today.
Chef Kirk Doyle said first you need to fry the tortilla until
its crispy and starts to show color on one side. Add a healthy
helping of shredded cheese and grill up potatoes, sausage and
onions in another pan. You can add some pico de gallo or salsa
fresca to the protein as well. Then, add the cooked meat to the
melted cheese in the quesadilla and top off the plate with
tomatillo sauce, along with Chipotle sour cream and regular sour
cream.
If you would rather be served, you can visit Z'Tejas at three
Austin locations and enjoy a football game while sipping a mimosa
and enjoying brunch.
