Recipe: Mediterranean Festival tabouleh

AUSTIN (KXAN) - The 79th Annual Mediterranean Festival is less than a week away. Twin Liquors' Sandra Spalding stops by the KXAN set to create a classic Mediterranean salad to hold us over until the festival begins.

Tabouleh

1 pound of Tomatoes diced

1 pound of Parsley, finely minced

1 pound of medium Bulgur

1 pound of Cucumbers, peeled and diced

2 cups green of Green Onions, minced

Water

Salt and Pepper to taste

Lemon Juice to taste

Olive oil to taste

 

Soak Bulgur in water. Once water is absorbed (drain if needed) add all vegetables, add salt, pepper, lemon Juice and olive oil to taste.

Place in Fridge and serve when ready.
