AUSTIN (KXAN) - There is a new twist on the traditional restaurant/bar that’s in downtown Austin absinth bar, where drinks are hand-crafted. The bar, named La Peche, also has a worldly food menu.
Executive Chef Jason Dodge says the dishes are French-inspired and they do everything in-house. “From making sausages to making cheeses. All different charcuteries . We butcher animals. Yesterday we got whole veal and half a hog and all of that is going to be used for sausages and steaks..you name it.”
The chefs and bartenders are specialized in Absynth drinks but they say they can cook up any kind of mixed drinks. “We can do anything across the border," Dodge said. "If someone comes in and says I want a 20-year-old Scotch…we can do that.”
The chefs also recently took a trip to Italy for inspiration and learned to make Italian dishes the traditional way, such as pastas, pesto and ragout.
