Fried egg sandwich with truffle aioli

AUSTIN (KXAN) - Max's Wine Dive visits KXAN Austin News for Tasty Thursday to fry an egg sandwich accompanied with truffle aioli.

Ingredients

  • 2 slices of ciabatta
  • 1 Tbls truffle aioli (recipe follows)
  • 1 oz clarified butter
  • 3 pieces cooked bacon
  • 3 eggs
  • ½ oz white cheddar, shredded
  • ½ oz gruyere, shredded
  • Drizzle truffle oil
  • Pinch course sea salt
  • 2 slices tomato
  • Crisp bib lettuce

 

Directions

  • Toast bread in clarified butter in a large skillet
  • Cook 3 eggs over easy and drizzle with truffle oil, a pinch of sea salt and fresh cracked pepper
  • Top with shredded cheeses
  • Spread truffle aioli on toasted bread
  • Top with fried eggs, three pieces of bacon, lettuce and tomato
