Cauliflower Salad and sweet potatoes

AUSTIN (KXAN) - Roasted Cauliflower Salad

1 large head of cauliflower sliced thin and blanched
2 T olive oil
2 lemons zested
Juice of 2 lemons
1 t chili flake
¼ c white wine
¼ c white raisins
¼ cup picked parsley
2 T capers
2 T extra virgin olive oil
1 T sugar
Salt & Pepper

1. Combine raisins and white wine.
2. Heat olive oil till smoking in large sauté
3. Add cauliflower and turn down heat to medium.
4. Flip once halfway through cooking. Cauliflower should be golden brown.
5. Once evenly cooked add all other ingredients.
6. Taste and adjust as necessary.

 

 

 

Sweet & Spicy Sweet Potatoes


3 large sweet potatoes sliced into medallions and halved
3 T olive oil
1 lime juiced
1 lime zested
1 T white sugar
1 T extra virgin olive oil
¼ c picked cilantro leaves
1 ½ t charred jalapeño
Salt & Pepper

1. Heat olive oil till smoking in large sauté
2. Add sweet potatoes and turn down heat to medium.
3. Flip once halfway. Sweet potatoes should be golden brown and cooked through.
4. Once evenly cooked combine all other ingredients
5. Taste and adjust as necessary.

Serves 8 portions each as sides.
