AUSTIN (KXAN) - ZuZu's handmade Mexican food cooks up one of its popular items: Cilantro-chile chicken.
The following recipe makes 4- to 6 servings.
Ingredients
Jalapeno-citrus marinade
- 2 – 3 jalapeno or Serrano chilies, seeded and coarsely chopped
- 6 – 8 medium cloves garlic, coarsely chopped
- Juice of 2 limes
- 4 tablespoons extra virgin olive oil
- 1/2 cup chopped cilantro, large stems removed
- 3/4 teaspoon freshly ground black pepper
- 3/4 teaspoon kosher salt (more to taste)
- 2 teaspoons ground cumin
Meat
- 1 ½ pounds boneless, skinless chicken breast, washed and patted dry
Directions
- Puree all the marinade ingredients in a blender. Blend until smooth.
- Put the chicken in the marinade in a plastic bag and refrigerate for at least 30 minutes.
- You may marinate the chicken for several hours or overnight.
- Remove the chicken from the marinade.
- Grill the chicken or bake it at 375 degrees for 20 – 30 minutes until the chicken is fully cooked.
