ZuZu makes its cilantro-chile chicken

AUSTIN (KXAN) - ZuZu's handmade Mexican food cooks up one of its popular items: Cilantro-chile chicken.

The following recipe makes 4- to 6 servings.

Ingredients

Jalapeno-citrus marinade

  • 2 – 3 jalapeno or Serrano chilies, seeded and coarsely chopped
  • 6 – 8 medium cloves garlic, coarsely chopped
  • Juice of 2 limes
  • 4 tablespoons extra virgin olive oil
  • 1/2 cup chopped cilantro, large stems removed
  • 3/4 teaspoon freshly ground black pepper
  • 3/4 teaspoon kosher salt (more to taste)
  • 2 teaspoons ground cumin

Meat

  • 1 ½ pounds boneless, skinless chicken breast, washed and patted dry
     

Directions

  1. Puree all the marinade ingredients in a blender. Blend until smooth.
  2. Put the chicken in the marinade in a plastic bag and refrigerate for at least 30 minutes.
  3. You may marinate the chicken for several hours or overnight.
  4. Remove the chicken from the marinade.
  5. Grill the chicken or bake it at 375 degrees for 20 – 30 minutes until the chicken is fully cooked.
