Tasty Thursday: Rice and Spinach Salad

AUSTIN (KXAN) - Chef Jesse Bloom of Ecstatic Cuisine visited the KXAN studio for Tasty Thursday. Bloom is a caterer who runs a cafe out of the Region XII Building, 5701 Springdale Rd.

Here’s the recipe:

 

Ecstatic Rice and Spinach Salad

 

3 cups cooked short or medium grain brown rice

2 cups chopped baby spinach

½ cup small dice red bell peppers

¼ cup chopped raisins or currants

¼ cup chopped fresh peaches, mangos, or pineapple

¼ cup slivered blanched almonds or pine nuts

½ cup or more Cilantro Honey Lime dressing

Sea salt to taste

Fresh basil and cilantro to garnish

 

 

Cilantro Lime Dressing:

¼ cup lime juice

½ cup grapeseed/olive oil blend

¼ cup chopped packed fresh cilantro and thai basil

1 Tbl honey

1 tsp ginger

Salt to taste

 

For dressing combine all ingredients in blender and blend. For Rice Salad fold all ingredients together and add dressing to taste. Provecho. Makes 4-6 side portions or 3 main portions. Provecho!
