AUSTIN (KXAN) - Popcorn Ice Cream

  • 16 yolks
  • 2c sugar
  • 2c milk
  • 6c cream
  • 8oz brown butter
  • 1 qt. popped popcorn
  • 2 t salt
  • 2 T stabilizer

Directions

  1. Warm the milk and cream, then steep the popcorn in it for 20 min.
  2. Combine yolks, sugar, salt and stabilizer in a bowl.
  3. Bring the milk mixture to a boil, then temper into the egg mixture.
  4. Stir in the butter, let melt, then strain into a bowl.
  5. Chill in an ice bath before storing or spinning.

Candy Bar

  • .5 box saltines
  • 4c graham crumbs
  • 16 oz butter
  • 2c brown sugar
  • 1c milk
  • 2/3c sugar
  • 7 oz 55%
  • 2/3 c peanut butter

Directions

  1. Melt the butter, milk, and sugars and stir to combine. Add the graham crumbs, and bring to a boil.
  2. Boil for 5 minutes, stirring frequently.
  3. Line a cake pan with plastic wrap.
  4. Line the bottom with saltine crackers.
  5. Pour half of the graham mixture over the top and spread evenly.
  6. Add another layer of crackers, then top again with the remaining half of the graham mixture.
  7. Melt the chocolate and peanut butter in a double boiler, and, once smooth, spread evenly over the top.
  8. Refrigerate until the chocolate is set, then cut.
