AUSTIN (KXAN) - Stubb's BBQ prepares a goat's leg in anticipation of the upcoming Bad to the Bone Chef Smackdown.
For the marinade, the restaurant mixes:
1/4 lb cascabel red pepper
2 tablespoons fresh garlic
1 tablespoon cumin
2 oz. Jack Daniels
1 cup pineapple juice
6 bay leaves
The restaurant recommends using a young, small goat for the recipe. For preparation, soak the leg in the marinade for 24 hours and then cook it at 200 degrees for about five hours. To create a Tex-Mex twist, pull the meat from the bone and serve with pico de gallo and tortillas.
The Feb. 27 smackdown will include creations from various chefs and feature live music. Tickets sell for $35. The event starts at 6 p.m.
