Ski Shores Cafe spices up lakeside food

Cafe serves Tex-Mex near Lake Austin

Austin (KXAN) - As the summer heats up, plenty of folks will head straight to the lakes. If you’re in the mood for some lakeside leisure, Ski Shores Café has you covered. Their Tex-Mex can spice things up right on Lake Austin. Greg Schwab and Cory Miers shared the recipe for Ski Shores’ Border Burger and guacamole.

 

Border Burger:

  • Bun
  • 1/3 pound burger Pattie
  • 3 oz Guacamole
  • 2 oz mayonnaise
  • 1 slice American cheese
  • 2 oz Sliced onions grilled
  • 1 oz sliced jalapenos grilled


Grill the hamburger until desired doneness; grill the onions and jalapenos with butter on the griddle with butter. Toast the hamburger bun. Add the grilled jalapenos and onions to the hamburger and melt the cheese. Spread the guacamole across the bottom of the bun and the mayonnaise on the top. Place the burger on the bun and top.

Guacamole:

  • 2 Avocado’s
  • 1Tbl Lemon juice
  • 1Tbl chopped cilantro
  • 2 Tbl Chopped onions
  • 1 Tomato, Chopped
  • ½ chopped jalapeno
  • Salt & Pepper to taste

Remove core from Avocado’s, scoop out pulp from seed using a spoon, add remaining ingredients and blend.
