AUSTIN (KXAN) - Olivia Chef James Holmes shares the secrets of the fresh peach soup.

Ingredients

  • 2 1/2 cups fresh peaches, pitted, pureed and strained
  • Grand marnier, to taste
  • Vanilla, to taste
  • Salt, to taste
  • Sugar, to taste
  • Heavy cream, to taste

This is a very forgiving and simple recipe that allows you to mix the ingredients to your taste.

Directions

  1. Start with the peaches and add as much, or as little, of the rest of the ingredients to suit your palate.
  2. At the restaurant, we serve this alongside a hunk of lemon cake, topped with coriander tuile and garnished with mint pearls, fresh peach quarters and whipped cream.
