AUSTIN (KXAN) - Jack Allen's Kitchen brings fresh ingredients and a local beer together to create a unique mustard fit for a traditional Irish corned beef.
Chef Jack Gilmore mixes together grain mustard, spicy dry mustard, honey, and some stout oatmeal beer from Austin's Independence Brewing Co. to complement a corned beef dish.
To prepare his corned beef, Gilmore cured the meat for 30 days, brazed it for 12 hours and then garnished it with potatoes, cabbage and herbs.
This Wednesday, Jack Allen's Kitchen will feature this corned beef dish and the accompanying mustard for St. Patrick's Day. The meal will also include a parfait of white chocolate mousse and the restaurant will feature live music.
