Corner Bakery Cafe opens in Round Rock

Restaurant chain expands north

ROUND ROCK, TX (KXAN) - Folks in Round Rock have a new place to get lunch. The Corner Bakery Cafe opened up there over the summer. Before the closest one was in Austin. On Thursday, Karina Riojas showed off the 430 calorie "Corner Combo."

BBLT

  • Six slices applewood smoked bacon
  • Vine-ripened local tomatoes
  • Green leaf lettuce
  • Cracked pepper balsamic mayo
  • Mom’s white toast
  • Salt and pepper

Spread the mayo on both slices of toast, completely covering the bread. Add a piece of green leaf lettuce to one slice of toast and layer with four thick cut slices of vine-ripened tomatoes. Sprinkle with salt and pepper.

Place the six strips of applewood smoked bacon on the tomatoes and top with the second slice of toast.

Arugula Salad

  • One ounce baby arugula
  • Yellow cherry tomatoes
  • Diced Roma tomatoes
  • Lemon garlic marinade for tomatoes
  • Parmesan cheese

Create a bed of arugula on the plate. Layer two spoons of marinated tomatoes on top of the arugula and drizzle with marinade. Sprinkle with Parmesan cheese
