AUSTIN (KXAN) - Lindsay O'Rourke of Annie's Cafe and Bar prepares an espresso creme brulee featured on the restaurant's menu. To make the dessert at home:
Mix about seven ounces of sugar into a quart of cream. Bring the mixture to a boil.
Whisk together one whole egg and four yolks.
Add one tablespoon of instant espresso powder and one teaspoon of vanilla to the sugar and cream mixture. Bring the mixture to a boil again.
Whisk the boiling mixture into the eggs.
Strain the mixture to extract excess coffee grounds.
Put the mixture into a creme brulee dish and cook it at 350 degrees for 30-45 minutes until it's set.
Annie's serves this dessert Tuesdays through Thursdays 5:30-7:30 p.m. The cafe torches its version of the recipe and tops it off with berries.
